Just a quick meal I whipped up with a Mediterranean feel -- anything with tomatoes and really good olive oil has my vote! Veggies local to Canada (greenhouse) but not "local" as it's clearly not tomato season yet!
No recipe required: Salad with Raincoast tuna (canned yet sustainable!), splash of olive oil and lemon juice. Quinoa tossed with tomatoes cooked in olive oil! Served with a nice Baco Noir (Peller Estates), chilled to perfection. Ahh, summer. I will be sharing more meals and recipes this summer, so stay tuned!
